Cold Cucumber Soup and Matjes Tartare on White Bread

- 0.5 cucumber
- 2 bunches arugula
- 1 small green chili pepper
- 1 Garlic clove
- 1 tbsp mint leaves
- 400 ml Vegetable broth
- Salt
- ground black pepper
- lime juice
- 4 matjes fillets (marinated in oil)
- 1 Shallot
- Lemon juice
- 8 slices baguette
- 2 tbsp stiffly whipped cream
- 1 tsp lemon zest
- mint leaves for garnish

Wash the cucumber, halve it, remove seeds and dice into small cubes. Clean, wash and dry the arugula. Wash the chili, deseed and finely chop. Peel the garlic and roughly cube it. Blend the cucumber cubes with the arugula, garlic, chili, mint leaves and vegetable broth until smooth. Season with salt, pepper and a splash of lime juice. Chill the soup for 2 hours.

Drain the matjes well and dice into small cubes. Peel the shallot, finely chop and mix into the matjes. Season with lemon juice and pepper. Fill glasses with the chilled soup. Place one slice of bread on each glass topped with a spoonful of matjes tartare, a dollop of stiffly whipped cream, some lemon zest and mint leaves for garnish. Serve immediately.
