Coffee Macarons

Ingredients
- 4 cold egg whites
- 1 tsp lemon juice
- 250 g sugar
- 1 tbsp cold mocha
- 250 g ground almonds
- 1 tbsp instant mocha powder
- 1 tbsp mocha liqueur
- 100 g powdered sugar
- 50 mocha beans

Preheat the oven to 120°C (fan) and line a baking sheet with parchment paper.

Beat the egg whites with lemon juice until very stiff, gradually adding the sugar. Continue beating until a firm, glossy mixture forms. Fold in the mocha, ground almonds, and instant mocha powder gently.

Spoon the batter into a piping bag fitted with a large round tip. Pipe small dots about 2-3 cm in diameter onto the parchment-lined sheet. Bake in the preheated oven for about 30‑40 minutes until pale.

The macarons should be firm on the outside and slightly soft inside. Remove from the baking sheet using the parchment paper and cool on a rack.

Whisk together mocha liqueur and powdered sugar to make a thick glaze. Transfer to a small zip‑lock bag, cut a small corner at the bottom, and drizzle the glaze over each macaron. Top with one mocha bean and let dry.
