Spanish-Style Almond Macarons

Quick dessert: Spanish-style almond macarons are perfect for gifting, bringing along, and snacking.
Ingredients
- 3 eggs
- 300 g ground, peeled almonds
- 200 g sugar
- 1 tsp lemon zest
- a pinch of salt

Preheat the oven to 180°C (350°F) with upper and lower heat.

Separate the eggs. Mix the almonds with the sugar and lemon zest, then gradually fold in the yolks. Beat the egg whites with a pinch of salt until stiff peaks form, and gently fold them into the almond mixture.

Fill a piping bag fitted with a large star tip with the batter and pipe small mounds onto a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes until golden yellow. Remove, lift from the sheet, and let cool.
