Ingredients
- 6 sheets gelatin
- 400 ml hot coffee
- 40 g sugar
- 1 tsp vanilla essence
- 1 pinch cinnamon
- 1 pinch Cardamom
- 200 ml heavy cream
- 4 tbsp dark chocolate shavings
Instructions

Soak the gelatin in cold water for about 10 minutes. Stir freshly brewed coffee with sugar, vanilla essence, cinnamon and cardamom until the sugar dissolves. Squeeze out excess water from the gelatin and dissolve it in the warm liquid. Pour into four small glasses and refrigerate for at least 6 hours to set.

Before serving whip the cream stiffly. Transfer remaining whipped cream into a piping bag with a round tip and spread over the coffee gelée. Sprinkle with chocolate shavings and serve.
