Cod Tartare

Fish lovers beware: Cod tartare from Spoonsparrow combines crisp vegetables with tender fish – healthy enjoyment made easy!

Ingredients

  • 2 untreated lemons
  • 4 tbsp grape seed oil
  • 0.5 tsp sharp mustard
  • 2 tbsp chopped parsley
  • Salt
  • white pepper
  • 500 g very fresh cod fillet
  • 1 small zucchini
  • paprika powder (sweet)
  • parsley (for garnish)

Instructions

    Wash a lemon, dry it and grate about half its zest. Halve the lemon and cut two thin slices from each half, then cross‑cut those slices. Squeeze both lemons and mix the juice with grape seed oil, mustard, parsley, salt, and pepper. Rinse the fish, pat dry, and dice into ~1 cm cubes. Toss with the dressing and set aside.

    Wash, trim, and cut the zucchini into 6 cm long pieces. Slice thinly for the first layer, then julienne finely for the second layer.
