Cold Pineapple Soup

Ingredients

  • 1 pineapple
  • 75 g sugar
  • 1 vanilla pod
  • 1 lemon (zest)
  • 2 pineapple slices (canned)

Instructions

    Clean the pineapple, remove leaves and place whole on a baking sheet; roast in preheated oven at 180°C for about 1 hour. Then remove and let cool.

    Melt sugar in a pan until golden caramelized, then pour in 250 ml cold water (watch out for splashes!) and let cool.

    Halve the pineapple and scoop out the flesh. Split the vanilla pod lengthwise and scrape out the seeds. Blend pineapple flesh with vanilla seeds. Add lemon zest to the puree and combine with the syrup; simmer gently for 10 minutes. Strain through a sieve, cool, and cover in the refrigerator for several hours.
