Coffee Pralines

Ingredients
- 60 oval praline hollow spheres (from dark couverture)
- 100 g fondant
- 100 g rum
- 250 g mocha chocolate
- 30 g glucose
- 200 ml milk
- 1 tsp instant coffee powder
- 20 ml mocha liqueur
- 200 g dark couverture
- 60 gold-colored chocolate beans

Place the praline hollow bodies on a baking tray. Mix fondant and rum, pour into a piping bag, and fill the bodies up to 1/3. Leave overnight.

Then crush the mocha chocolate with glucose in a bowl. Bring milk to a boil and gradually stir it into the chocolate with a spatula, being careful not to incorporate too much air. Let the mixture cool to about 30°C, then add the liqueur and blend well with an immersion blender. Allow to sit briefly and pipe the mixture almost up to the rim of the hollow bodies using a piping bag. Leave for about 6 hours.

To seal, melt crushed dark couverture in a double boiler, let it cool slightly, and pipe the pralines spirally closed with a piping bag, placing one chocolate bean on each. Cool and allow to set. Store chilled and airtight.
