Cod with Nut Crust on Parsnip Purée

Cod with nut crust on parsine purée by Spoonsparrow is a quick dish for cool days that also pleases guests.

Ingredients

  • 4 cod fillets (125 g each)
  • 50 g hazelnuts
  • 50 g Pine nuts
  • 2 sprigs oregano
  • 60 g fine rolled oats (4 tbsp)
  • 3 Tbsp liquid butter
  • Salt
  • Pepper
  • 800 g parsnips
  • 4 tbsp olive oil
  • 80 g heavy cream
  • nutmeg
  • 5 g Basil (1 handful)
  • 4 tsp walnut oil

Instructions

    Pat cod fillets dry and rinse. Finely chop hazelnuts and pine nuts. Wash oregano, pat dry, and chop leaves. Mix nuts, oats, and oregano with liquid butter.

    Place fish in a baking dish, season with salt and pepper, spread nut mixture over fillets, press lightly. Bake in preheated oven at 200 °C (180 °C fan; gas level 3) for 20–25 minutes.
