Ingredients
- 700 g cod fillet (ready to cook, skin removed)
- Salt
- 3 tbsp Lemon juice
- oil
- 2 tbsp Curry Powder
- 350 ml heavy cream (at least 30% fat)
- 1 can mandarin oranges (about 320 ml contents)
- 1 bunch spring onions
- 350 g Mushrooms
- 2 tbsp red peppercorns

Preheat the oven to 200°C with upper and lower heat. Rinse the cod fillet under cold water, pat dry, cut into four equal pieces, season with salt and drizzle with lemon juice.

Place the fish pieces in a greased baking dish. Whisk the heavy cream with curry powder.

Drain the mandarin oranges and reserve the juice. Stir 5 tbsp of the juice into the sauce.

Trim and slice the spring onions. Clean and slice the mushrooms. Add both to the sauce along with the mandarins, then pour over the fish.

Bake in the preheated oven for 20-25 minutes until golden. Serve on plates and sprinkle with peppercorns.
