Ingredients

  • 800 g white fish fillet (e.g., cod or halibut)
  • 1 stalk leek (only the white part)
  • 4 tomatoes
  • 1 red bell pepper
  • 200 g waxy potatoes
  • 2 onions
  • 2 Garlic cloves
  • 4 bay leaves
  • Sea salt
  • black pepper (freshly ground)
  • olive oil
  • 150 ml dry white wine

Instructions

    Preheat the oven to 200°C fan.

    Wash and pat dry the fish fillets. Wash the leek, cut it lengthwise into halves and separate into individual leaves. Boil the tomatoes briefly, shock in cold water, peel, quarter, seed and dice finely. Wash, halve, clean and peel the bell pepper with a vegetable peeler, then dice finely. Peel and dice the potatoes, onions and garlic. Layer the fish fillets alternately with the vegetables and bay leaves in a heat‑proof dish. Season with salt and pepper between layers and drizzle with olive oil. Finally pour in the white wine, cover with a lid and bake for about 35 minutes. Taste and serve.
