Ingredients

  • 4 cod fillets (≈150 g each)
  • 1 tsp lemon juice
  • 4 dried tomatoes (in oil)
  • 1 tbsp cranberries
  • 250 g goat cheese
  • 6 thyme sprigs
  • Salt
  • Pepper (freshly ground)
  • 3 onions
  • 40 g Butter
  • fat for greasing the baking sheet

Instructions

    Preheat the oven to 250°C with upper and lower heat. Grease a baking sheet.

    Wash, pat dry, and drizzle cod fillets with lemon juice. Finely dice dried tomatoes. Rinse cranberries. Cube goat cheese. Wash thyme sprigs, shake off excess moisture, pluck leaves from stems (reserve a few sprigs for garnish). Pat fish dry and season with salt and pepper. Mix cheese with cranberries, dried tomatoes, and thyme; spread over fillets. Place fillets on the sheet and bake 10-12 minutes.

    Meanwhile, peel onions and slice into rings. Melt butter in a pan and sauté onions until translucent.
