- 4 tbsp dry white wine

Melt the butter and skim off the foam. In a metal bowl, whisk together the egg yolks and wine over a hot water bath until creamy. Remove from heat and gradually drizzle in the melted butter while continuously stirring until a smooth, glossy sauce forms. The egg mixture should not curdle.
