Ingredients

  • 600 g cod fillet
  • 1 onion
  • 4 slices toast bread
  • 5 sprigs flat-leaf parsley
  • 4 Tbsp breadcrumbs
  • 1 egg
  • 1 tbsp Lemon Juice
  • Salt
  • Pepper (freshly ground)
  • 3 tbsp Rapeseed oil
  • lettuce leaves (for garnish)
  • tomato slice (for garnish)

Instructions

    Wash the cod fillet, pat dry with kitchen paper and cut into cubes. Peel and chop the onion. Soak the toast bread in a little water. Wash the parsley, shake dry and chop the leaves.

    Blend the fish together with the chopped onion in a blender. Mix in the squeezed toast bread, breadcrumbs, egg, chopped parsley and lemon juice to form a dough. Season with salt and pepper. With damp hands shape small patties from the dough.

    Heat rapeseed oil in a non-stick pan and fry the patties on both sides for 7–8 minutes each. Drain on kitchen paper. Plate on dishes and garnish with lettuce leaves and tomato slices.
