Ingredients

  • 4 pieces veal fillet (about 160 g each)
  • 1 tsp salt
  • 0.5 tsp pepper (freshly ground)
  • 2 oranges
  • 3 lemons
  • 2 tbsp raisins
  • 250 g instant couscous
  • 150 ml olive oil
  • arugula
  • 4 lemon halves

Instructions

    Press the veal fillets slightly flatter and season with salt and pepper.

    Soak raisins in warm water.

  3. 3.

    Prepare couscous according to package instructions.

    Mix couscous and raisins, set aside warm.

    Squeeze oranges and lemons; bring the juice to a boil in a small pot. Reserve 2 tbsp olive oil, whisk the rest into the juice and season with salt and pepper, keep warm.

    Heat 2 tbsp oil in a pan and sear the veal fillets for about 2–3 minutes on each side until nicely browned.

    Spread couscous with lemon sauce on plates, arrange veal fillets on top, garnish with arugula and lemon halves, and serve.
