Kalbsrouladen

Ingredients
- 200 g spinach leaves
- Salt
- 125 g sweet-sour pickled pumpkin (from jar)
- pepper (ground)
- 1 tsp paprika powder
- 4 calf steaks (160 g each)
- 1 Tbsp clarified butter
- 200 ml white wine
- juice of one lemon
- 100 g whipping cream
- 1 tsp maple syrup
Instructions

Wash, clean, and trim the spinach, blanch in lightly salted boiling water for about 1 minute, then drain and let cool. Dice the pumpkin very small, season heavily with salt, pepper, and paprika powder.

Flatten the calf steaks between sheets of cling film, season with salt and pepper.

Lay the spinach on each steak and spread the pumpkin filling over it. Roll the meat from the long side and secure with toothpicks.

Heat clarified butter in a pan and quickly brown the rolls all around. Then pour in white wine and lemon juice, cover and simmer at medium heat for 10 minutes.

Remove the rolls from the pan and keep warm.

Stir the cream into the sauce, bring to a boil, then reduce slightly. Season with maple syrup, salt, and pepper to taste.

Before serving remove the toothpicks, slice the rolls into thin rounds, and arrange on plates with the sauce.
