Ingredients

  • 4 cod fillets (about 160 g each)
  • 3 tbsp horseradish (jarred)
  • 2 Spring Onions
  • 2 tbsp freshly chopped watercress
  • 1 tbsp freshly chopped dill
  • 1 tbsp freshly chopped parsley
  • 75 g breadcrumbs
  • 2 tbsp olive oil
  • Salt
  • ground pepper

    Preheat the oven to 220°C with fan and top heat.

    Rinse the fish fillets, pat dry, and season with salt and pepper. Place on a foil-lined baking tray and brush with horseradish. Wash, trim, and finely chop the spring onions. Mix the chopped herbs, breadcrumbs, and olive oil; season with salt and pepper. Spread over the cod fillets and bake in the upper third of the oven for about 10 minutes until golden brown.
