Ingredients

  • 250 g Cherry Tomatoes
  • 2 red onions
  • Salt
  • Pepper (freshly ground)
  • olive oil
  • 4 cod fillets (about 160 g each)
  • 50 g Pistachios
  • 50 g breadcrumbs
  • 1 untreated lemon

    Preheat the oven to 220°C fan.

    Wash and halve the tomatoes. Peel and cut the onions into wedges. Season both with salt and pepper, then toss with 1-2 tbsp olive oil. Spread on a parchment-lined baking tray and bake for about 5 minutes.

    Rinse the cod fillets and pat dry. Pulse pistachios in a food processor and mix with breadcrumbs. Grate the lemon zest and squeeze the juice. Mix zest into the pistachio-breadcrumb blend. Drizzle fillets with a little lemon juice, season, and brush with olive oil. Coat fillets in the breadcrumb mixture and place on the tray with the vegetables. Toss the vegetables and bake everything together for another 6-8 minutes until golden brown. Flip the fish once.
