Ingredients
- 2 Spring Onions
- 50 g freshly chopped herbs (e.g., parsley, thyme and chervil)
- 125 g soft butter
- 1 tsp lemon zest
- 125 g breadcrumbs
- Salt
- Pepper (freshly ground)
- 8 cod fillets (about 120 g each)
- 2 tbsp olive oil
- 2 tbsp lemon juice

Preheat the oven to 180°C fan.

Wash, trim and slice the spring onions into fine rings. Mix with herbs and lemon zest, then combine with breadcrumbs and season with salt and pepper.

Place the cod fillets in a baking dish, drizzle with olive oil and lemon juice, and season with salt and pepper. Spread the herb mixture over the fish and bake for about 20 minutes until golden brown.
