- 1 pinch salt
- 250 g sugar
- 2 packets vanilla sugar
- 200 g Flour
- 0.5 tsp Baking powder
- 200 g whipping cream
- 250 g quark
- 150 g crème fraîche
- 125 ml amaretto (alcohol-free)
- 2 packs stabilizer
- 150 g coconut flakes
- 8 small marshmallows
- 8 cookies
- 8 marzipan carrots
- chocolate chips
- candied orange slice
- 50 g chocolate glaze

Preheat the oven to 200°C and line a baking sheet with parchment paper.

Separate the eggs. Whisk the egg whites, salt, and 5 tbsp cold water in a hand mixer until stiff peaks form. Beat the yolks with 200g sugar and 1 packet vanilla sugar until fluffy. Sift flour and baking powder into the mixture and fold in gently. Fold in the beaten egg whites. Spread the batter onto the sheet and bake for 10-12 minutes, checking with a toothpick. Remove the sponge from the pan, set on a towel, peel off parchment immediately, and let cool.

In a large bowl mix quark, crème fraîche, amaretto syrup, 50g sugar, and 1 packet vanilla sugar until smooth. Whip cream to stiff peaks while adding stabilizer. Fold this into the amaretto mixture. Tear the cooled sponge into fine pieces with hands and combine with the cream mixture, mixing evenly with a spatula. Sprinkle coconut flakes on a tray. Divide the mixture into three equal portions. From one portion, form about eight small balls with dampened hands; from the other two portions, form four larger balls each. Roll all balls in coconut flakes; flatten the larger ones on one side and place them on small plates, topping each with a smaller ball as head. For hats, attach marshmallows to cookies, glue with chocolate glaze, and cover. Slice candied orange into wings and decorate the snowmen.
