Ingredients

  • 50 g butter
  • 3 eggs
  • 80 g sugar
  • 1 tsp gingerbread spice
  • 80 g flour
  • 300 g marzipan raw mass
  • 2 tbsp powdered sugar
  • 300 g dark couverture chocolate
  • 100 g milk couverture chocolate
  • 150 g gooseberry jam
  • 2 tbsp palm oil

Instructions

    Preheat the oven to 180°C.

    Line the bottom of a rectangular baking dish with parchment paper. Melt the butter. Separate the eggs. In a bowl over a hot water bath, beat the yolks with 3 tbsp sugar and gingerbread spice until creamy, let cool, then fold in the flour and lukewarm butter. Whisk the egg whites with remaining sugar until stiff peaks form. Fold into the yolk mixture. Pour the batter into the dish and smooth the top. Bake in the preheated oven for about 30 minutes. Remove, allow to cool slightly, then loosen the cake from the edges with a knife. Transfer to a cooling rack, remove the parchment, and let the cake cool completely.

    Knead the marzipan raw mass with powdered sugar. Roll between clear plastic film to match the size of the cake. Melt the chopped couverture chocolate in a warm water bath. Trim the cake edges straight. Slice the cake horizontally into two halves. Spread jam on one side, cover the other with marzipan. Stack the halves together and cut into 40 cubes (about 2x2 cm). Add palm oil to the chocolate, melt it, then coat the cubes and let set.
