Ingredients
- 150 g bittersweet couverture (65% cocoa)
- 150 g milk couverture (35% cocoa)
- 100 ml whipping cream (min 30% fat)
- 20 ml rum
- 100 g marzipan base
- 50 butter biscuits
- 250 g bittersweet couverture (65% cocoa)
- 50 g white chocolate
Instructions
-
1.
For the filling, chop the coverages and melt them in a small pot with the cream and rum. Whisk vigorously until smooth. Crumble the marzipan base, fold it in, and chill for at least 3 hours to set.
-
2.
Line a candy mold or shallow baking dish (≈30×15 cm) with cling film. Arrange a layer of butter biscuits on the bottom. Beat the cooled cream again with a whisk, then spread one‑third over the biscuits. Add another biscuit layer and repeat until three layers are formed. Finish with a fourth biscuit layer. Chill for an additional hour.

3.
After chilling, chop the bittersweet couverture and white chocolate separately and melt each in a double boiler. Remove the domino blocks from the mold using cling film, cut into cubes, then drizzle with the melted bittersweet coverage. Optionally decorate with a praline fork dipped in white chocolate and allow to set fully.
