Ingredients
- 350 g coconut (1 coconut)
- 1 Mango
- 400 g Skyr

Open the coconut and collect the coconut water. Pour it through a fine sieve into a blender. Grate about 350 g of coconut flesh, set aside a little for garnish, and blend the rest with the coconut water until smooth.

Peel the mango, remove the flesh from the pit, and cut into pieces. Reserve four nice slices for garnish. Add the remaining mango pieces and skyr to the coconut puree. Blend again and pour in cold water (about 200 ml) until the desired consistency is reached.

Serve in four glasses, garnished with shredded coconut and mango slices.
