Coconut Macarons with Chocolate

Ingredients
- 2 egg whites
- 100 g fine sugar
- 2 tsp lemon juice
- 1 pinch salt
- 175 g coconut flakes
- 200 g dark chocolate couverture

Beat the egg whites until stiff, then gradually fold in the sugar, lemon juice and salt. Scrape in the coconut flakes with a spatula.

Line a baking sheet with parchment paper. Using two teaspoons, place small mounds on the sheet. Bake in a preheated oven at 150°C (gas: level 1-2, fan: 130°C) for about 30 minutes.

Let the macarons cool on a wire rack.

Cut the chocolate into pieces and put it in a stainless steel bowl. Melt over a double boiler, stirring occasionally.

Dip each macaron about 3 mm deep into the melted chocolate, gently wipe off excess from the rim of the bowl, and place them back on the wire rack to dry.

Carefully loosen the macarons with a kitchen knife.
