Almond Chocolate Macarons

- 200 g almonds (deveined, ground)
- 100 g sugar
- bitter almond flavoring
- 2 egg whites
- 40 g powdered sugar (for dusting)
- 150 g dark chocolate (at least 60% cocoa content)
- 75 ml heavy cream

Preheat the oven to 140°C. Mix the almonds with 50 g of sugar and the almond flavoring. Whisk the egg whites with the remaining sugar until very stiff, white, glossy, and firm. Gently fold in the almond mixture and pipe the batter into a piping bag fitted with a round tip.

Squeeze 40-50 dots onto a parchment-lined baking sheet, spacing them apart.

Dust with powdered sugar and bake for about 15 minutes. Turn off the oven and let the cookies dry for 1 hour.

Meanwhile, chop the chocolate finely and melt it over a double boiler, then set aside to cool slightly. Whip the cream stiffly and fold it into the still-warm chocolate mixture.

Fill a freezer bag with the chocolate ganache, cut a corner, and pipe the filling onto half of the macarons. Assemble with the remaining halves, let them dry briefly, and serve with coffee.
