Ingredients

  • 4 egg whites
  • 2 tsp lemon juice
  • 250 g superfine sugar
  • 200 g ground almonds
  • red food coloring (optional)
  • 350 g cream cheese
  • 2 tbsp powdered sugar
  • 2 tbsp raspberry syrup
  • 1 tsp rose water

Instructions

    Preheat the oven to 150°C with both top and bottom heat. Beat the egg whites with lemon juice until very stiff peaks form, then gradually add the sugar while continuing to beat. Keep beating until a firm, glossy batter forms, then gently fold in the almonds.

    Color the batter with food coloring if desired, then fill a piping bag fitted with a large round tip. Pipe small half-moon shapes about 2 cm across onto parchment-lined baking sheets. Bake in the preheated oven for about 40 minutes, leaving the oven door slightly ajar during baking.

    While the macarons bake, whisk together cream cheese, powdered sugar, raspberry syrup, and rose water until smooth to make the filling. Remove finished macarons from the oven, transfer them off the sheet, and let cool. Spread the filling onto half of the macarons, top with the remaining halves, press gently, and serve.
