Pecan Macarons

Ingredients

  • butter (for the baking sheet)
  • 2 egg whites
  • 1 pinch salt
  • 150 g sugar
  • 0.5 lemon (juice)
  • 2 tsp lemon zest
  • 100 g ground pecans
  • 120 g pecans

Instructions

    Preheat the oven to 160°C (320°F) with upper and lower heat. Butter a baking sheet.

    Beat the egg whites until stiff peaks form. Gradually add salt, sugar, lemon juice, and lemon zest, continuing to beat until the mixture is very stiff. Gently fold in the ground pecans. Using two damp teaspoons, scoop small mounds onto the prepared sheet, spacing them apart, and decorate with whole pecans around each mound.

    Bake on the middle rack for about 25 minutes. Remove and let cool.
