Coconut Cream with Fresh Berries

Ingredients

  • 20 g coconut flakes (3 tbsp)
  • 30 g almond slivers (3 tbsp)
  • 1 tbsp Cornstarch
  • 1 tsp raw cane sugar
  • 250 ml coconut milk (9% fat)
  • 150 g Yogurt (1.5% fat)
  • 1 tbsp Lemon Juice
  • 400 g mixed berries (e.g., blueberries, raspberries, blackberries, currants)

Instructions

    Mix coconut flakes and almonds and toast them in a dry pan until golden brown.

    Whisk the cornstarch with sugar and a splash of coconut milk until smooth.

    Heat the remaining coconut milk, stir in the starch mixture, bring to a boil once, then remove from heat and let cool.

    Stir yogurt and lemon juice into the cooled coconut cream.

    Rinse berries, pat dry, and set aside.

    Layer the berries with the coconut cream, toasted almonds, and remaining coconut flakes in glasses.
