Classic Saltimbocca

Ingredients
- 8 small veal cutlets (≈80 g)
- 4 slices Parma ham
- 8 sage leaves
- 1 tbsp Olive Oil
- 2 tbsp butter
- Salt
- ground pepper
- 100 ml Marsala or dry white wine

If needed, gently flatten the cutlets with your palm to even thickness. Cut each Parma ham slice in half and fold into a size that fits the veal cutlet; place on top of the meat. Lay one sage leaf over each and secure with toothpicks.

Heat oil and 1 tbsp butter in a hot skillet and sear the cutlets, fat side down, for 1–2 minutes at medium heat. Flip, cook until done, season with salt and pepper, then remove after another 1–2 minutes.

Deglaze the pan with Marsala, reduce to a sauce, stir in remaining butter, and do not boil further. Return the cutlets to the sauce, let them warm through briefly, then serve drizzled with the sauce.
