Schnitzel with Cheese and Pear

Ingredients
- 8 veal cutlets (about 80 g each)
- Salt
- Pepper (freshly ground)
- 1 pear
- 1 tbsp Lemon Juice
- 100 g sheep cheese
- 10 sage leaves
- 1 Shallot
- 2 tbsp olive oil
- 200 ml dry white wine

Rinse the cutlets and pat them dry. Lightly season both sides with salt and pepper. Wash the pear and grate it roughly. Drizzle with lemon juice. Mash the sheep cheese with a fork and fold in the grated pear. Rinse the sage leaves and shake them dry. Finely chop two leaves and stir into the cheese mixture. Season with salt and pepper to taste.

Spread the cream on the cutlets, leaving a small border free. Roll each cutlet, place one sage leaf on top, and tie with kitchen twine.

Dice the shallot finely. Sauté in hot oil until translucent, then add the rolled cutlets to the pan and brown all sides for 1–2 minutes. Deglaze with wine and simmer gently for about 5 minutes until cooked through.
