Ingredients
- 2 shallots
- 200 g butter
- 125 ml dry white wine
- 2 tbsp wine vinegar
- Salt
- white pepper (from grinder)
Instructions

Peel the shallots, finely chop them and sauté in 1 tbsp hot butter until colorless.

Deglaze with white wine and vinegar and reduce by about half.

Strain through a sieve, reheat, and gradually stir in cold butter pieces until a creamy sauce forms.

Do not cook further. Blend with an immersion blender and season with salt and pepper.
