Ingredients
- 700 g yellow bell peppers
- 2 onions
- 1 tsp ginger (freshly grated)
- 50 g sugar
- 200 ml orange juice
- 2 tbsp white wine vinegar
- 1 tsp curry powder
- Salt
- Pepper

Halve the bell peppers, remove seeds, wash and finely dice. Peel and finely chop the onions.

Melt the sugar in a pot over low heat, add the vegetable cubes and ginger, stir and sauté for about 4-5 minutes, then stir in curry powder and pour in orange juice, bring to a boil once. Simmer gently for 20 minutes, puree with a blender, season with salt and pepper. Pour into one or more twist-off jars, seal tightly and let cool. Store in the refrigerator for at least 2 weeks.
