Citrus Onion Salad

Ingredients

  • 4 oranges
  • 4 blood oranges
  • 1 Lime
  • 1 small garlic clove
  • 5 g ginger (1 piece)
  • 20 g pine nuts (1 packed tbsp)
  • 1 Red Onion
  • 1 tbsp honey
  • Sea salt
  • Cayenne pepper
  • 4 sprigs oregano

Instructions

    Peel the oranges and blood oranges thoroughly, removing all white pith. Slice the fruits into rounds. Squeeze the lime. Peel and mince the garlic. Peel and grate the ginger.

    Toast the pine nuts in a dry skillet until golden brown. Peel the onion and slice into thin rings. Mix the garlic with honey, ginger, and lime juice; season with sea salt and cayenne pepper.
