Citrus Mousse with Pistachios

Ingredients

  • 5 sheets gelatin
  • 300 g yogurt
  • 200 g quark
  • 1 tsp lemon zest
  • 50 g sugar
  • 20 ml limoncello
  • 150 ml whipping cream
  • edible flowers (optional)
  • Chopped pistachios

Instructions

    Line the rim of four small serving molds (about 200 ml each) with parchment strips, leaving about 2 cm overhang.

    Soak gelatin in cold water. Whisk yogurt, quark, lemon juice and zest, and sugar until smooth. Squeeze out excess water from gelatin and dissolve it with limoncello in a low‑heat pot. Fold in 2 Tbsp yogurt cream and mix into the base. Beat whipping cream to stiff peaks, fold into mixture, then pour into molds. Chill for at least 3 hours.

    Before serving, sprinkle edible flowers and pistachios as desired.
