Citrus Granita with Cream

Ingredients

  • 300 ml water
  • 50 g sugar
  • juice of one lemon
  • 1 sprig mint
  • 200 g whipping cream
  • 1 packet vanilla sugar
  • 1 Organic Orange
  • 1 grapefruit

Instructions

    Peel the orange and grapefruit thick with a knife, remove all white membranes, and cut out fillets along the inner membranes. Catch the juice that drips out and thoroughly squeeze the citrus remnants by hand.

    Cover the citrus fillets and refrigerate them cold.

    Boil the water with sugar, orange, grapefruit, lemon juice, and half the mint in 2-3 minutes, then strain through a sieve.

    Pour the liquid into a shallow metal container and place it in the freezer. As soon as the liquid starts to freeze, stir with a spoon. Repeat this process every ~20 minutes until the contents look like slushy ice.

    Whip the cream with vanilla sugar until stiff peaks form. Spoon the whipped cream onto dessert bowls, arrange the granita on top, and garnish with mint leaves and orange and grapefruit fillets.
