Goat Cheese Onion Tarts

Ingredients
- 250 g puff pastry (frozen)
- oil (for the tins)
- 3 red onions
- 2 Eggs
- 200 ml whipping cream
- 2 tbsp crème fraîche
- 2 tbsp freshly chopped parsley
- Salt
- Pepper (freshly ground)
- 6 slices goat cheese (roll)
- chopped parsley (for garnish)

Let the puff pastry thaw.

Preheat the oven to 180°C fan. Brush the tins with oil.

Roll out the dough to 3-4 mm thickness and cut slightly larger than the tins. Line them, trim excess edges. Peel and slice onions into wedges. Whisk eggs with cream, crème fraîche and parsley; season with salt and pepper. Distribute onions over the tarts, pour a little sauce on each. Place a slice of goat cheese on top and bake in the oven for about 30 minutes until golden brown.

Remove from tins and serve sprinkled with parsley.
