Ingredients

  • 100 g dried fruit
  • 3 tbsp Cointreau
  • 30 g Sesame seeds
  • 80 g sugar
  • 400 g whipping cream
  • 1 Vanilla bean
  • oil (for baking sheet)
  • 1 egg
  • 1 yolk
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1 tbsp Lemon Juice

Instructions

    Dice the dried fruit, soak in Cointreau and set aside. Roast the sesame in a dry pan until fragrant, then remove.

    Caramelize 50 g of sugar in the pan. Toss the sesame in it, pour in 20 g cream. Grease a baking sheet. Spread the mixture on it and let cool.

    Split the vanilla bean and scrape out the seeds. Combine with 130 g cream and bring to a boil. Whisk together egg, yolk, and 30 g sugar until creamy. Stir in honey, cinnamon, and hot vanilla cream. Heat the mixture until thickened. Stir in cold ice water.

    Mix the vanilla custard, sesame crunch, dried fruit, and lemon juice. Whip 250 g cream to stiff peaks and fold into the mixture. Pour into a mold and freeze for 6 hours, stirring occasionally.
