Ingredients
- 10 sheets white gelatin
- 250 g grapefruit flesh (the entire skin and all white membranes must be removed)
- 250 g honeydew melon flesh
- 80 g sugar
- 3 tbsp Lemon juice
- 500 ml grapefruit juice

Soak the gelatin in cold water. Roughly chop the flesh of both citrus fruits and marinate with sugar and lemon juice for 1 hour. Then puree the fruit, strain through a sieve, and top up with the juice. Squeeze out excess liquid from the gelatin and dissolve it over a hot water bath; mix with a little grapefruit sauce, then stir into the entire mixture. Sweeten further if desired.

Stir until the liquid begins to gel. Pour into a large decorative bowl and refrigerate for about 4 hours.
