Cinnamon Minis
Healthy homemade breakfast treat: Cinnamon minis.
Ingredients
- 160 g whole wheat spelt flour
- 1 tsp Baking powder
- a pinch of salt
- 3 tsp cinnamon
- 60 g coconut oil (+ 1 tbsp)
- 10 g coconut blossom sugar (about 1 tsp)
- a pinch vanilla powder
- 30 g honey (about 2 tbsp)
- 60 ml buttermilk

Combine the whole wheat flour, baking powder, salt and 2 tsp of cinnamon in a bowl. Melt 60 g coconut oil and add it with coconut blossom sugar, vanilla powder and honey to the flour mixture. Mix everything with a hand mixer into a crumbly dough. Then stir in the buttermilk.

Shape the dough by hand into a ball, place it on a sheet of parchment paper and press it slightly flat. Lay another sheet of parchment over it and roll the dough between the papers with a rolling pin to a very thin thickness (max 0.5 cm).

Melt the remaining coconut oil and mix in 1 tsp cinnamon. Brush this oil mixture thinly over the dough with a brush.

Carefully cut squares with a long knife. Lift the parchment onto a baking sheet and bake the cinnamon minis in a preheated oven at 175 °C (fan: 160 °C; gas: level 2–3) for 15 minutes until crisp.
