Spoonsparrow Cinnamon Cookies ❄︎ ❅ ❆ Rolled classics with a healthy twist!
Ingredients
- 1 shortcrust pastry (basic dough recipe)
- 20 g liquid butter (2 Tbsp)
- 2 tsp ground cinnamon
- 15 g raw cane sugar (1 tbsp)
- 1 egg yolk
Instructions

First prepare the dough according to the basic recipe. Refer to the shortcrust dough recipe.

Roll out the shortcrust dough into a rectangle about 25 × 40 cm and brush with liquid butter. Mix cinnamon and raw cane sugar, then sprinkle over the dough.

Roll the dough from the narrow side and chill for another 30 minutes.

Cut the rolled dough into slices 0.5–1 cm thick and place on a baking sheet lined with parchment paper. Beat the egg yolk with 1 Tbsp water and brush the cinnamon cookies with this mixture.

Bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for 10–12 minutes until golden brown. Remove the cookies and let them cool.
