Cinnamon Stars Without Almonds

Ingredients
- 300 g sugar
- 3 egg whites
- 2 tsp lemon juice
- 500 g peeled, ground hazelnut kernels (or cashew kernels)
- 3 tsp cinnamon
- sugar for rolling
- 150 g powdered sugar
- 2 tbsp lemon juice

Beat the egg whites until very stiff and gradually fold in the sugar. Stir in the lemon juice and continue beating with a hand mixer until the sugar dissolves. Mix the nuts with cinnamon and fold into the meringue until a pliable dough forms. Cover and refrigerate for 1 hour.

Roll the dough to a thickness of 6 mm on a sugared work surface, cut out star shapes, and place them on a baking sheet lined with parchment paper. Bake the cinnamon stars at 180°C for 12 minutes.

Whisk the powdered sugar with lemon juice until thick. Brush the baked stars with this glaze and allow them to dry.
