Ciabatta with Curry Shrimp

Ingredients

  • 8 head lettuce leaves
  • 1 Zucchini
  • 2 tbsp olive oil
  • 12 shrimp (prepped, peeled and deveined)
  • 6 tbsp mayonnaise
  • 4 tbsp Sour cream
  • Salt
  • Pepper (freshly ground)
  • curry powder (to taste)
  • 1 ciabatta loaf
  • 8 slices smoked salmon

Instructions

    Wash, trim and dry the lettuce leaves. Wash, trim and cut the zucchini into thin sticks.

    Heat oil in a pan and sauté the zucchini with the shrimp. Toss and season with salt and pepper.

    Whisk mayonnaise with sour cream and season with salt, pepper and curry. Fold the cooled shrimp and zucchini into the mayo mixture.

    Cut the ciabatta into four equal pieces, split horizontally and hollow out. Lay two slices of smoked salmon on the top half and place one lettuce leaf over it. Place another lettuce leaf on the bottom half and spread the shrimp mixture on top. Fold both halves together and serve wrapped in a napkin.
