Calamari Salad with Olives

Ingredients
- 2 cloves garlic
- 1 sprig thyme
- 5 tbsp olive oil
- 500 g frozen calamari (ready to cook)
- Salt
- Pepper (freshly ground)
- 1 lemon (juice)
- 200 g Cherry tomatoes
- 300 g small boiled potatoes
- 1 bunch parsley (≈30 g)
- 50 g black olives
- basil (for garnish)
Instructions

Peel the garlic and sauté with thyme in 3 tbsp oil. Rinse the calamari, pat dry, add to the pan, stir-fry briefly and let cool slightly. Season with salt, pepper, and lemon juice.

Wash and halve the tomatoes. Cut the potatoes into halves or quarters, combine both with chopped parsley and olives under the fish, drizzle remaining olive oil over the mixture, garnish with basil, arrange on plates and serve.
