Ingredients

  • 1 Ciabatta
  • 2 tbsp butter
  • 250 g arugula
  • 2 small tomatoes
  • 2 tbsp olive oil
  • 2 mozzarella balls (low fat)
  • 4 tbsp arugula pesto
  • 100 g Serrano ham (thinly sliced)
  • Salt
  • Pepper

Instructions

    Slice the ciabatta lengthwise and spread butter on the bottom half. Wash, rinse, remove tough stems from the arugula and dry it. Evenly distribute the arugula and Serrano ham over the buttered side. Wash, dry, trim the stem ends of the tomatoes and slice them.

    Drain the mozzarella and slice it as well. Spread the tomato slices and mozzarella on top of the ciabatta, then spread a little pesto on each mozzarella slice. Place the other half of the ciabatta on top, press down gently, and cut the sandwich in half. Wrap each half in parchment paper and serve.
