Ingredients

  • 4 eggs
  • 250 g sugar
  • 250 g whole almond kernels
  • 2 tsp Lebkuchengewürz spice blend
  • 2 tsp grated lemon zest
  • 25 g finely chopped lemon curd
  • 25 g finely chopped orange curd
  • 0.5 tsp Baking powder
  • 250 g flour

Instructions

    Whisk the eggs with the sugar until the mixture becomes thick and frothy, then add the almonds, spices, lemon curd, orange curd, baking powder, and sifted flour.

    Spread the dough onto a sheet of parchment paper on a baking tray to a half-inch thickness. Refrigerate overnight. Preheat the oven to 180°C (350°F) fan‑fry.

    Bake in the preheated oven for about 20 minutes, remove, let cool, and cut into 4x4 cm squares.
