Ingredients
- 250 g flour
- 3 tsp baking powder
- freshly ground white pepper
- 0.5 tsp Salt
- 50 g softened butter
- 1 cup milk
- 1 egg yolk
- 200 g smoked salmon (sliced)
- 200 g clotted cream (or double crème or cream cheese)
- 16 small sprigs of rosemary

Mix all ingredients except the milk together and knead in enough milk so that the dough holds together.

Roll out on a floured surface to about 2.5 cm thickness and cut into eight squares roughly 6 cm wide. Place on a baking sheet lined with parchment paper, brush with beaten egg yolk, and bake in a hot oven at 200°C for 12-14 minutes until golden yellow.

For serving cut the scones crosswise once and spread with clotted cream (or lightly whipped double crème), top with salmon slices, and garnish decoratively by pinning with rosemary sprigs.
