Christmas Pudding by Spoonsparrow: The British classic is a special treat for the holiday season!

Ingredients

  • 100 g raisins
  • 50 g currants
  • 80 g dried plums
  • 2 tbsp lemon juice
  • 1 apple
  • 100 g Dried Apricots
  • 60 g Butter
  • 50 g whole-grain breadcrumbs
  • 75 g spelt whole-wheat flour
  • 75 g ground hazelnuts
  • 2 tbsp honey
  • 2 Eggs
  • 0.25 tsp clove powder
  • 0.5 tsp cinnamon
  • mandarin segments
  • cranberries

Instructions

    Soak the raisins and currants, strain them in a sieve, and let them drain. Finely chop the dried plums, mix with the raisins, currants, and lemon juice. Peel, quarter, core, and finely grate the apple. Chop the apricots finely and add them along with the apple to the fruit mixture.

    Add the softened butter, breadcrumbs, flour, nuts, honey, eggs, clove powder, and cinnamon to the fruit mixture and knead into a dough. Fill a greased pudding basin as needed, seal it, place the pudding in a hot water bath on a rack, and bake at 150 °C (convection: 130 °C; gas: level 1–2) for about 3 hours.

    Store the pudding in its sealed container until serving. When ready to serve, pour the pudding onto a plate and garnish with mandarin segments and cranberries as desired.
