Christmas Cookies without Butter

A recipe for Christmas cookies that can be baked with great flavor even without butter.
Ingredients
- 300 g sugar
- 3 egg whites
- 2 tsp lemon juice
- 500 g ground almonds
- 3 tsp cinnamon
- sugar (for rolling)

Beat the egg whites very stiff and gradually add the sugar. Stir in the lemon juice and continue beating with a hand mixer on high speed for 10 minutes. Spoon 4 tablespoons of the mixture into a cup, cover and set aside. Mix almonds with cinnamon and fold 3/4 of the amount into the meringue until a pliable dough forms for the butter‑free Christmas cookies.

Cover and refrigerate for 1 hour. Roll out the dough to a thickness of 6 mm on a sugared surface, cut out star shapes and place them on a baking sheet lined with parchment paper. Brush the remaining egg whites over the cookies and bake at 180°C for 12 minutes.
