Christmas Cake with Plum Jam

Ingredients
- 125 g milk chocolate couverture
- butter (for the pan)
- flour (for the pan)
- 250 g softened butter
- 200 g sugar
- 1 Tbsp vanilla sugar
- 4 eggs
- 300 g flour
- 3 tsp baking powder
- 2 tsp gingerbread spice
- 30 g cocoa powder
- 20 ml rum
- 225 ml milk
- 150 g plum jam

Chop the couverture and melt it over a double boiler.

Preheat the oven to 170°C (fan) or 180°C (conventional). Butter and flour the cake tin. Whisk the butter, sugar and vanilla sugar until fluffy. Beat in the eggs one at a time, mixing well after each addition. Sift together the flour, baking powder, gingerbread spice and cocoa. Add the rum, the dry mixture and the milk to the batter quickly, whisking continuously. Fold in the melted chocolate and pour the batter into the tin. Bake for about 50 minutes, checking with a skewer test. Let it cool briefly in the tin, then remove and allow to cool completely. Slice horizontally, spread warm plum jam on one half and reassemble.
