An American classic made simply: Chowder from Spoonsparrow!

Ingredients

  • 1 onion (chopped)
  • 1 garlic clove (chopped)
  • 2 medium potatoes (starchy, boiled), peeled and diced
  • 1 tbsp butter
  • 2 tbsp cornmeal
  • 800 ml poultry broth
  • Salt
  • Pepper (freshly ground)
  • 200 g crab meat (cooked, ready to use)
  • a splash white wine
  • a dash lemon juice
  • 100 ml heavy cream
  • 100 g canned corn
  • parsley (for garnish)

Instructions

    Melt butter in a pot. Add onion, garlic, and potatoes. Sauté briefly, stir in flour, and deglaze with a splash of white wine. Add broth. Simmer gently for about 20 minutes, stirring occasionally.

    Then fold in corn, diced crab meat, and cream; season with salt, lemon juice, and pepper to taste.

    Sprinkle with parsley before serving.
