Ingredients

  • 600 g white fish fillet (e.g., cod)
  • 250 g crab meat (canned)
  • 1 Garlic clove
  • 1 Shallot
  • 2 tbsp freshly chopped coriander leaves
  • breadcrumbs
  • Salt
  • lime juice
  • ground pepper
  • vegetable oil (for frying)
  • 2 Tomatoes
  • 1 handful leafy salad (e.g., sorrel or arugula)
  • 5 tbsp mayonnaise
  • 0.5 tsp wasabi
  • 8 mini burger buns
  • chives (for garnish)

Instructions

  1. 1.

Wash the fish, pat dry and roughly cube it. Drain the crab meat well and combine with the fish in a food processor without over-processing. Peel and finely chop the garlic and shallot; mix them with the coriander into the fish mixture and add enough breadcrumbs until the dough is firm. Season with salt, lime juice and pepper, then shape about 8 small patties. Cover and chill for ~30 minutes.

  2. 2.

Heat oil in a skillet and fry each patty 3–4 minutes per side until golden brown.

  3. 3.

Wash the tomatoes, remove stems and slice them. Wash, dry and tear the salad leaves. Mix mayonnaise with wasabi. Slice buns horizontally and toast if desired. Spread a thin layer of wasabi mayo on the bottom halves, then add tomato slices and salad. Place a patty on top and drizzle remaining mayo. Garnish with chives and serve with the bun tops.
